Coconut-Chip Pancakes

These pancakes are delicious! They even got a thumbs up from the non-vegan boyfriend! If you don’t have cacao nibs, I’m sure regular chocolate chips would be fantastic.

Coconut-Chip Pancakes

  • 1/2 medium banana, mashed
  • 1 stevia packet
  • 1/4t cinnamon
  • 1/4t pure vanilla extract
  • Pinch salt
  • 2T white whole-wheat flour
  • 2T quick oats
  • 1/2T ground flax
  • 2T unsweetened shredded coconut
  • 1/2T cacao nibs
  • 1/4-1/3cup almond milk

In a bowl combine mashed banana, stevia, salt, cinnamon and vanilla. Mix in flour, oats, flax, coconut, cacao nibs and almond milk. Cook in a lightly greased pan until golden brown on both sides.
